well...it has definitely been a while since i have posted in here...a lot of things have changed in the past 6 or so months, and i can only say they only made me stronger...so lets move on, dust off our dancing shoes, break out the spatula, and get started on fun drinks, yummy snacks, and delicious treats for this summer!


Since we all love yummy treats, this is one of first recipes that i would like to put on here since it seems it will be a fiesta in your mouth!!! (later i will post pics when i figure this whole shenanigan out!)




Southwestern Chopped Chicken Salad


the Salad:
2 cups shredded boneless skinless chicken breast 
1 green bell pepper, diced
1 can black beans, rinsed
1 can sweet yellow corn
2 Roma tomatoes, diced
4 green onions, sliced
1 head iceburg lettuce, rinsed and chopped (or your lettuce preference)
1/4 cup cilantro, chopped
2 ripe avocados, diced
1 cup crunched tortilla chips (love tortilla chips? add more for extra crunchiness)


the Dressing:
1/2 cup mayo (which ever one is your fav)
2/3 cup Greek yogurt (yes, yogurt...)
1 tbsp ranch seasoning
1 tbsp taco seasoning


the How To:
In a larger bowl, combine all salad ingredients Except the tortilla chips.
In a smaller bowl, combine all of the dressing ingredients until smooth and creamy. Gradually pour the dressing little by little until it is fully incorporated into the salad.


Now if you want, you can prepare everything ahead of time and keep the salad and dressing separate but in the fridge and then before your serve it you and add the dressing, toss it up, and then add the broken tortilla chips on top! Say you don't like tortilla chips? Serve them separately so that you and your guests can enjoy them however you guys like! This would also be good served on little toasted baguettes or any toasted bread that you like.  


Serve it up with some home~made sweet tea or some fresh lemonade!
